Thanksgiving Recipe Challenge- Sweet Potatoes

There are little more than two weeks left until Thanksgiving!
Are you ready? I'm not.  I am looking for a few yummy new recipes to adorn my table and to share here online. I'd sure appreciate your help.  As we count down the next few weeks leading to Thanksgiving Day, I will post a HOP for one ingredient every few days.  That way, we'll have plenty of ideas in case we want to try something new this year.
Today's ingredient of choice is the sweet potato.
They're low in fat and high in fiber and trace minerals like Manganese and Potassium.  They're also a great source of Vitamins A, C, and B6. Check out how great they are for your diet here: http://nutritiondata.self.com/facts/vegetables-and-vegetable-products/2667/2

Any recipes, Thanksgiving stories or ideas that incorporate sweet potatoes are welcome.  I am excited to see what YOU do with them.  Thanks for sharing!
