If you read my Country Garden Showcase post you know I have been taking it easy this week. I did a bit of canning last night. That makes a total of 24 half pints of pizza sauce this season. Whew! Here's my canning total this season to date:
24 half pints pizza sauce
47 quarts concord grape juice cocktail
36 half pints spiced peach jam (I like to heat this up and spread it between the layers of cake)
6 quarts peaches in light syrup
9 8 oz jars of watermelon jelly
16 pints of concord grape jam
24 half pints concord grape jelly
The jam and jelly usually gets given away for gifts and as you can see from the numbers, my experiment with Saan Marzano paste tomatoes has set me back by several weeks. This time last year I already had more than 40 quarts of tomato and enchilada sauce. Alas, I think I am going to end up with mostly green tomato enchilada sauce this year, but that's okay. I like it too.

WOW ! Busy lady you have been ! I am in the process of putting together my own Country Kitchen Recipe book from all the recipes I remember my mum making when we were on our farm and some others from friends from their own country kitchens , lots of home made home grown YUMMYNESS ! I am also planning my raised veggie gardens for next season and getting back to my roots of living of our land the best I can ! Have a good day !

ReplyDeleteYou are on a roll! I'll have to get your enchilada sauce recipe and gift you with my chiptole sauce w/ recipe. My first 25 lbs. of tomatoes came off the bushes at the same time and the sauce is delish! So far the 50 plants have given me 15 pints of chiptole sauce, 6qt, 4pt, 7 8oz jar of tomato sauce, and 8 pts of italian seasoned diced tomatoes. Canning up the garden for the upcoming year is so fun and rewarding.
